I came by this cupcake post on Simone Nowell’s Time to Cook blog and just had to comment. I LOOOOVE cupcakes! Besides easy vegetarian cookbooks, I don’t buy any cookbooks, but a cupcake cookbook just might grace my kitchen someday. (How many times can you say cookbook in the same sentence, huh? It’s a gift!) My love for the perfect cupcake knows no boundaries.
I cannot tell you what a moist cupcake with the perfect icing can do for my spirits. But I honestly eat very few cupcakes. Why? Because more often than not, they disappoint me! They’re dry or too sweet or whatever. i don’t seek out cupcakes, but when I find great ones, look out!
I once made cupcakes instead of cake for my son’s birthday. I had a long counter top, so I lined decorated cupcakes up in a pattern like a caterpillar would crawl. It had a larger “head” cupcake with antennae and each small cupcake was iced in green and served as a caterpillar’s body with legs made from pipe cleaners and gumdrops. CUTE!!
Each person got a cupcake instead of a piece of cake. It’s great for young kids. I’d love to do that again sometime for my youngest before they all get too old.
What other kind of cool things could you make with cupcakes?

I’ve done cupcakes instead of cake for birthdays, but I didn’t arrange them all cute-like. I like the caterpillar idea. Nicholas LOVES the very hungry caterpillar book (he has a puzzle, too).
We sprinkled some with gold dust (yellow sugar) for a pirate party once.
My friend’s wedding cake was stacked cupcakes instead of cakes.
And I’m out of ideas….

I have the Teens Vegetarian Cookbook and the Student’s Vegetarian Cookbook. They may be out of print - I think I got them on eBay. If anyone can recommend others, I could use more!
